How to Make Super Easy Sausage Peppers
- Preheat oven to 400°F (200°C).
- Place 1 lb Italian sausage (removed from casings) on a baking sheet. Bake for 20 minutes, or until cooked through. While sausage is baking, heat 1 tbsp olive oil in a large skillet over medium heat. Add 1 medium onion, chopped, and saute until translucent (about 5 minutes).
- Once sausage is cooked, crumble it into the skillet with the onions. Add 28 oz (one 28 ounce can) crushed tomatoes, 1 tsp dried oregano, 1/2 tsp salt and 1/4 tsp black pepper. Stir to combine.
- Bring to a simmer and cook for 15 minutes. Add 2 bell peppers (any color), chopped, and cook for another 15 minutes, or until peppers are tender.
- Serve the sausage and pepper mixture over cooked rice. Garnish with fresh parsley (optional).
