How to Make Toffee Grapes

  1. Line two baking trays with non-stick baking paper.
  2. Using kitchen scissors, carefully cut the grapes into small bunches of 3-6 grapes.
  3. In a heavy-based saucepan, combine 1 cup granulated sugar and 1/4 cup water. Stir over low heat until the sugar dissolves completely.
  4. Increase the heat to medium and bring to a gentle boil. Without stirring, cook for 12-15 minutes, or until the mixture turns a rich golden color. Periodically brush down the sides of the pan with a pastry brush dipped in water to prevent crystallization.
  5. Remove from heat and let the toffee mixture stand until the bubbling subsides.
  6. Using kitchen tongs, carefully dip each grape cluster into the toffee mixture, turning gently to ensure even coating.
  7. Transfer the coated grapes to the prepared baking trays.
  8. Repeat steps 6 and 7 with the remaining grapes and toffee mixture.
  9. Let the toffee grapes set for 10 minutes.
  10. Arrange the set toffee grapes on a cheese board with your favorite cheeses (Gorgonzola recommended!).
  11. Serve with water biscuits, oatcakes (recipe #144738), and bread slices. Enjoy!
