- Unsweetened Pineapple Chunks

- 2 tablespoons lemon juice

- Green Grapes
- 1 tablespoon poppy seeds
- 1/2 cup chopped pecans (optional)
How to Make Apple Pineapple Salad
- In a small bowl, whisk together cornstarch and cold water until smooth. Set aside.
- Pour reserved pineapple juice into a saucepan. Add margarine and lemon juice.
- Cook over medium heat, stirring frequently, until margarine is melted and the mixture is smooth.
- Gradually whisk in the cornstarch slurry, stirring constantly.
- Bring the mixture to a boil, then reduce heat to low and simmer for 2 minutes, or until the sauce has thickened.
- Remove from heat and stir in the sugar until it dissolves completely. Let cool to room temperature (approximately 30 minutes).
- In a large bowl, combine the drained pineapple, diced apples, halved grapes, and poppy seeds.
- Pour the cooled dressing over the fruit mixture.
- Gently toss to coat evenly.
- Cover and refrigerate for at least 1 hour to allow the flavors to meld.
- Just before serving, gently fold in the chopped pecans (if using).
