How to Make Turkish Delight Cupcakes

  1. Preheat oven to 180°C (350°F).
  2. Grease and flour a 12-hole standard muffin tin or line with paper cupcake liners.
  3. In a large bowl, cream together 170g (1 1/2 sticks) softened butter and 200g granulated sugar until light and fluffy.
  4. Beat in 3 large eggs one at a time, then stir in 2 tablespoons of rose water and 120ml (1/2 cup) sour cream.
  5. In a separate bowl, sift together 200g (1 3/4 cups) all-purpose flour, 1 tsp baking powder, 1/2 tsp baking soda, and a pinch of salt.
  6. Gradually fold the dry ingredients into the wet ingredients until just combined. Do not overmix.
  7. Evenly distribute the batter into the prepared muffin tin, filling each cup about 2/3 full.
  8. Press a small piece (about 1cm cube) of Turkish Delight into the center of each cupcake.
  9. Bake for 20-25 minutes for standard cupcakes, or 15 minutes for mini cupcakes, or until a wooden skewer inserted into the center comes out clean.
