How to Make Turtles Cheesecake

  1. Preheat oven to 350°F (175°C). Prepare a 9-inch springform pan by greasing and flouring it.
  2. In a large bowl, combine the graham cracker crumbs, melted butter, and sugar. Mix until well combined.
  3. Press the mixture into the bottom of the prepared springform pan. Bake for 10 minutes. Let cool completely.
  4. Meanwhile, in a large bowl, beat the cream cheese and sugar until smooth and creamy.
  5. Beat in the eggs, one at a time, then stir in the vanilla extract.
  6. Fold in the chopped pecans and caramel candies.
  7. Pour the cheesecake batter over the cooled graham cracker crust.
  8. Bake for 50-60 minutes, or until the cheesecake is set around the edges but still slightly jiggly in the center.
  9. Turn off the oven and leave the cheesecake inside with the door slightly ajar for 1 hour to prevent cracking.
  10. Remove from oven and let cool completely on a wire rack.
  11. Once completely cooled, refrigerate for at least 4 hours, or preferably overnight.
  12. Before serving, melt the chocolate chips and drizzle over the top of the cheesecake. Garnish with additional pecans if desired.
