How to Make Udon Noodles With Spicy Shrimp

  1. Butterfly each shrimp by cutting almost all the way through, leaving the bottom intact.
  2. Set aside.
  3. In a small bowl, whisk together the zest of 1 lime, 1/4 cup soy sauce, 2 tablespoons rice vinegar, 1 tablespoon brown sugar, 1 tablespoon sesame oil, and 1 teaspoon sriracha (or more, to taste).
  4. Divide the marinade in half (about 1/3 cup each).
  5. Place shrimp in a large resealable plastic bag. Add 1/3 cup of the marinade to the bag, seal, and refrigerate for at least 30 minutes (or up to 2 hours).
  6. In a large bowl, combine the remaining 1/3 cup marinade, 1 red bell pepper (sliced), 1/2 cup chopped scallions, 1/2 cup shredded carrots, and 1/4 cup chopped cilantro. Toss to coat.
  7. Cook 8 oz udon noodles or spaghetti according to package directions. Drain and set aside.
  8. Heat a large nonstick skillet coated with cooking spray over medium-high heat.
  9. Add the marinated shrimp to the hot skillet and sauté for 5-7 minutes, or until pink and cooked through.
  10. Add the cooked noodles/pasta to the bowl with the bell pepper mixture. Gently toss to combine.
  11. Add the cooked shrimp to the noodle mixture. Toss gently to combine.
  12. Sprinkle with 1/4 cup toasted sesame seeds or chopped peanuts (optional).
  13. Serve warm or chilled. Enjoy!
