How to Make Walnuts And Potatoes Bread

  1. Mash the boiled potatoes until smooth.
  2. In a large bowl, combine warm water, sugar, and yeast. Let stand for 5 minutes until foamy.
  3. Add the mashed potatoes, salt, and olive oil to the yeast mixture. Stir to combine.
  4. Gradually add the flour, mixing until a shaggy dough forms. Turn the dough out onto a lightly floured surface and knead for 5-7 minutes until smooth and elastic.
  5. Place the dough in a lightly oiled bowl, turning to coat. Cover and let rise in a warm place for 1-1.5 hours, or until doubled in size.
  6. Gently punch down the dough. Stir in the chopped walnuts.
  7. On a lightly floured surface, shape the dough into a rectangle. Fold the dough in thirds, like a letter, and flatten slightly.
  8. Let rest for 5 minutes. Fold again in thirds, flatten, and let rest for another 5 minutes.
  9. Repeat the folding and resting process two more times.
  10. Divide the dough into 6 equal pieces. Shape each piece into a 25-30cm long oval.
  11. Preheat oven to 230°C (450°F). Place a fireproof baking tin filled with hot water on the bottom rack of the oven.
  12. Arrange the loaves on two baking sheets. Lightly brush with beaten egg (optional).
  13. Let rise for another 30-45 minutes, or until almost doubled.
  14. Use scissors to make decorative cuts on the surface of each loaf.
  15. Bake for 20-25 minutes, or until golden brown. If the loaves are browning too quickly, loosely tent with foil.
  16. Remove from oven and let cool completely on a wire rack before slicing and serving.
