How to Make Weight Watchers Italian Sausage And Pepper Pasta

  1. Bring a large pot of salted water (about 6 quarts) to a boil for the pasta.
  2. Meanwhile, in a large nonstick skillet over medium-high heat, brown 1 lb Italian sausage, breaking it up with a spoon. Cook until browned, about 5-7 minutes. Remove sausage to a plate and set aside.
  3. Add 1 tbsp olive oil to the same skillet. Add 1 large yellow bell pepper (sliced) and 1/2 medium yellow onion (chopped). Cook, stirring frequently, until softened, about 5 minutes.
  4. Stir in 1/2 cup dry red wine and 2 cloves minced garlic. Cook until most of the liquid evaporates, about 1 minute.
  5. Add 28 oz can fire-roasted crushed tomatoes, 1/4 tsp crushed red pepper flakes, 1 tsp salt, and the browned sausage. Bring to a boil.
  6. Reduce heat to medium-low, cover, and simmer for 10 minutes, or until the sauce has thickened and the vegetables are tender.
  7. While the sauce simmers, add 1 lb pasta (your choice) to the boiling water. Cook according to package directions until al dente.
  8. Drain the pasta, reserving about 1/2 cup of pasta water.
  9. Return the pasta to the pot. Add the sauce and 1/4 cup fresh basil (chopped). Toss to combine, adding a little pasta water if needed to loosen the sauce.
  10. Serve immediately. Garnish with extra basil, if desired. Serves 4-6.
