How to Make Whities
- Preheat oven to 350°F (175°C).
- Grease and flour an 8x8 inch square baking pan, or line with parchment paper for easy removal.
- In a double boiler or heat-safe bowl set over a pot of simmering water, melt 1/2 cup (113g) unsalted butter and 4 ounces (113g) of white chocolate chips, stirring occasionally until smooth.
- Remove from heat and stir in the remaining 8 ounces (227g) of white chocolate chips until melted and combined.
- Set aside to cool slightly.
- In a separate bowl, beat 2 large eggs and 1 cup (200g) granulated sugar until pale and thick (about 3-5 minutes).
- Gradually add the cooled white chocolate mixture to the egg mixture, along with 1 teaspoon vanilla extract and 1 cup (125g) all-purpose flour.
- Beat on low speed until just combined. Do not overmix.
- Stir in 1 cup of your favorite mix-ins (chocolate chips, nuts, etc.)
- Pour batter into the prepared pan and spread evenly.
- Bake for 35-40 minutes, or until a toothpick inserted into the center comes out with moist crumbs.
- Let cool completely in the pan before cutting into squares.
