How to Make Whole Grain Blackberry Spice Muffins

  1. Preheat oven to 400°F (200°C). Line a 17-cup muffin tin with paper liners.
  2. In a large bowl, whisk together 2 cups whole wheat flour, 1 cup rolled oats, ¾ cup packed light brown sugar, 2 ½ teaspoons baking powder, 1 teaspoon baking soda, ½ teaspoon salt, and 1 ½ teaspoons apple pie spice.
  3. Create a well in the center of the dry ingredients.
  4. In a separate bowl, whisk together 1 cup milk, ¼ cup melted unsalted butter, 1 teaspoon vanilla extract, and 1 large egg.
  5. Pour the wet ingredients into the well of the dry ingredients. Stir gently until just combined; do not overmix.
  6. Gently fold in 2 cups fresh blackberries.
  7. Fill each muffin liner about ¾ full with batter.
  8. Bake for 16 minutes.
  9. Remove from oven and evenly sprinkle the tops of the muffins with 2 tablespoons granulated sugar.
  10. Return to the oven and bake for another 3 minutes, or until a toothpick inserted into the center comes out clean and the muffins spring back when lightly touched.
  11. Let the muffins cool in the tin for 10 minutes before transferring them to a wire rack to cool completely.
