  6. Pour half of the orange juice mixture into the skillet. Cover and simmer for 15-20 minutes, or until the chicken is cooked through.
  7. Remove chicken from skillet and set aside.
  8. In a small bowl, whisk together 2 tablespoons of cornstarch with the remaining orange juice mixture until smooth.
  9. Pour the cornstarch mixture into the skillet and cook over low heat for 1-2 minutes, stirring constantly, until the sauce has thickened.
  10. Slice the chicken breasts and serve over cooked white rice. Pour the orange sauce over the chicken and garnish with additional orange slices.
