  1. Preheat oven to 175°C (350°F). Grease and flour a 14cm x 21cm loaf pan.
  2. In a large heatproof bowl, combine 250g pitted dates, 60ml maple syrup, and 120ml boiling water. Let stand for 15 minutes to soften the dates.
  3. Add 100g walnuts (chopped), 50g brown sugar, 100g rolled oats, 100g sifted all-purpose flour, and 1 tsp baking soda to the date mixture. Stir until well combined.
  4. Pour the batter into the prepared loaf pan. Sprinkle with 1 tbsp sesame seeds. Bake for approximately 50-60 minutes, or until a wooden skewer inserted into the center comes out clean.
  5. Let the loaf cool in the pan for 5 minutes before turning it out onto a wire rack to cool completely.
