  • 1 teaspoon Mexican oregano
  • 1 teaspoon Kosher salt
  • ½ teaspoon garlic powder
  • Fresh Ground Black Pepper

How to Make A Golden Chicken

  1. Preheat oven to 375°F (190°C).
  2. Rinse a whole chicken (approx. 3-4 lbs) and pat it completely dry with paper towels.
  3. In a small bowl, prepare the spice rub: Combine 1 teaspoon mexican oregano, 1 teaspoon kosher salt, ½ teaspoon garlic powder, and ¼ teaspoon black pepper.
  4. Gently loosen the skin of the chicken breast and sprinkle half of the spice mixture under the skin. Add the remaining spice mixture into the breast cavity along with 2 small bay leaves.
  5. Place the chicken on a rack in a roasting pan. This allows for even cooking and crispy skin.
  6. Brush the chicken skin generously with 1 tablespoon of annatto oil.
  7. Roast the chicken for 45-50 minutes, or until a meat thermometer inserted into the thickest part of the thigh registers 165°F (74°C) and the juices run clear when pricked.
