How to Make A Golden Chicken
- Preheat oven to 375°F (190°C).
- Rinse a whole chicken (approx. 3-4 lbs) and pat it completely dry with paper towels.
- In a small bowl, prepare the spice rub: Combine 1 teaspoon mexican oregano, 1 teaspoon kosher salt, ½ teaspoon garlic powder, and ¼ teaspoon black pepper.
- Gently loosen the skin of the chicken breast and sprinkle half of the spice mixture under the skin. Add the remaining spice mixture into the breast cavity along with 2 small bay leaves.
- Place the chicken on a rack in a roasting pan. This allows for even cooking and crispy skin.
- Brush the chicken skin generously with 1 tablespoon of annatto oil.
- Roast the chicken for 45-50 minutes, or until a meat thermometer inserted into the thickest part of the thigh registers 165°F (74°C) and the juices run clear when pricked.
- Let the chicken rest for 10 minutes before carving and serving. Enjoy!
