How to Make Aamer Mango Chutney

  1. Peel and cut the 2 large ripe mangoes into 6 pieces each.
  2. Heat 2 tablespoons of vegetable oil in a medium-sized pan over medium heat.
  3. Add the mango pieces to the hot oil and fry until lightly browned on all sides (about 3-4 minutes per side).
  4. Remove the mango pieces from the pan and set aside.
  5. In the same pan, add the 2-3 broken dry red chilies and 1 teaspoon of panch phoron. Sauté for about 30 seconds until fragrant.
  6. Pour in 2 cups of water, 1/2 cup of sugar, and 1/2 teaspoon of salt. Bring to a boil.
  7. Add the fried mango pieces to the boiling mixture.
  8. Reduce the heat to medium-low and simmer, uncovered, for 30-40 minutes, or until the sugar syrup thickens to your desired consistency, stirring occasionally to prevent sticking.
  9. Remove from heat and let cool slightly.
  10. Pour the chutney into a serving bowl. Sprinkle with 1/4 teaspoon garam masala and 1/4 teaspoon cumin powder (optional).
