How to Make Absolutely Delicious And Simple Tomato Basil And Garlic Pasta
- Bring a large pot of salted water to a boil. Add 1 pound of pasta (penne, rotini, or your favorite shape) and cook according to package directions until al dente, about 8 minutes, stirring occasionally.
- While the pasta cooks, combine 28 ounces (1 can) crushed tomatoes, 1/2 cup packed fresh basil leaves (or 2 teaspoons dried basil), 4 cloves garlic, 2 tablespoons olive oil, 1/2 teaspoon salt, and 1/4 teaspoon black pepper in a food processor.
- Pulse until the tomatoes are coarsely chopped but not pureed. Set aside.
- Drain the pasta, reserving about 1/2 cup of the pasta water.
- Add the tomato mixture and 8 ounces fresh mozzarella, torn into bite-sized pieces, to the drained pasta in a large bowl. Toss to combine.
- If the sauce is too thick, add a little of the reserved pasta water, one tablespoon at a time, until you reach your desired consistency.
- Serve immediately. Garnish with extra fresh basil, if desired.
