How to Make Acadian Cranberry Pie Canada

  1. Combine 2 cups fresh or frozen cranberries, 1/2 cup water, 1/2 cup granulated sugar, and 1/4 cup brown sugar in a saucepan. Bring to a boil over medium heat.
  2. Reduce heat to low and simmer for 20-25 minutes, or until cranberries have burst and the sauce has thickened slightly.
  3. Remove from heat and stir in 1 large egg, lightly beaten, and 2 tablespoons of unsalted butter. Set aside to cool completely.
  4. Preheat oven to 400°F (200°C). Roll out your prepared pie pastry (enough for a double crust, approximately 2 1/4 cups all-purpose flour) for the bottom crust.
  5. Place the bottom crust in a 9-inch pie plate. Trim and crimp the edges.
  6. Blind bake the crust for 5 minutes; remove from oven and allow to cool slightly.
  7. Pour the cooled cranberry filling into the prepared pie crust.
  8. Top with a lattice crust or your preferred top crust. (Recipe for lattice crust can be easily found online)
  9. Reduce oven temperature to 350°F (175°C). Bake for 35-40 minutes, or until the crust is golden brown and the filling is bubbly.
