Ingredients for Acorn Magic Delights

  • Butter
  • 1 cup (200g) packed brown sugar
  • Pecans
  • All Purpose Flour
  • 1 teaspoon baking powder
  • Semi Sweet Chocolate Chips
  • Vanilla Extract

How to Make Acorn Magic Delights

  1. Preheat oven to 375°F (190°C).
  2. Melt 1/2 cup (113g) of butter or margarine over low heat.
  3. In a large bowl, cream together the melted butter, 1 cup (200g) packed brown sugar, 3/4 cup (50g) chopped pecans, and 1 teaspoon of vanilla extract until well blended.
  4. In a separate bowl, whisk together 2 1/2 cups (300g) all-purpose flour and 1 teaspoon baking powder.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. Shape the dough into 1-inch balls.
  7. Place the dough balls onto ungreased cookie sheets, slightly flattening each ball.
  8. Pinch the top of each ball to create a pointed acorn shape.
  9. Bake for 10-12 minutes, or until the edges are lightly golden brown.
  10. Remove from oven and let cool completely on wire racks.
  11. While the cookies cool, melt 6 ounces (170g) of semi-sweet chocolate chips in a double boiler or microwave-safe bowl. Stir until smooth.
  12. Dip the larger, flat end of each cooled cookie into the melted chocolate.
  13. Immediately roll the chocolate-dipped end in the remaining 3/4 cup (50g) chopped pecans.
  14. Place the finished cookies back onto the wire racks to allow the chocolate to set completely.

Chef's Tip for Extra Flavor

Want to unlock deeper, more complex flavors? Try toasting your whole spices before grinding them, or blooming ground spices in a little warm oil to enhance their aroma. Deglazing your pan with a bit of stock, wine, or even water after browning ingredients can capture those tasty caramelized bits, adding richness to your dish.
