How to Make Almond Danish Puff
- Preheat oven to 350°F (175°C).
- In a bowl, cut 1/2 cup (1 stick) softened butter into 1 cup all-purpose flour using a pastry blender or two knives until the mixture resembles coarse crumbs.
- Sprinkle 2 tablespoons of ice water over the mixture.
- Mix gently with a fork until the dough just comes together.
- Gather the pastry into a ball, divide it in half, and pat each half into a 12x3-inch rectangle.
- Place the rectangles about 3 inches apart on an ungreased baking sheet.
- In a 2-quart saucepan, heat the remaining 1/2 cup (1 stick) butter and 1 cup water to a rolling boil.
- Remove from heat and quickly stir in 1 teaspoon almond extract and 1 cup all-purpose flour.
- Stir vigorously over low heat for about 1 minute, or until a smooth ball forms.
- Remove from heat and beat in 2 large eggs, one at a time, until the mixture is smooth and creamy.
- Spread half of the almond topping over each rectangle of pastry dough.
- Bake for approximately 60-70 minutes, or until the topping is golden brown and crisp.
- Remove from the baking sheet and let cool completely on a wire rack.
- While the puffs cool, prepare the almond glaze (see below).
- Once the puffs are completely cool, spread the glaze evenly over the tops.
- Sprinkle with sliced almonds.
