- 1 cup (240ml) applesauce
- 2 tablespoons (28g) butter

- 1/2 cup (120ml) water
How to Make Acorn Squash Roasted With Applesauce
- Preheat oven to 350°F (175°C).
- Cut one medium acorn squash in half lengthwise. Scoop out and discard the seeds and stringy pulp.
- Lightly grease a baking dish with cooking spray.
- Place the acorn squash halves cut-side up in the prepared baking dish.
- In each squash half, place 1 tablespoon (14g) of butter, then sprinkle with 1/4 teaspoon salt and a pinch of freshly ground black pepper.
- Fill each squash half with 1/2 cup (120ml) of applesauce. Dot the top with the remaining 1 tablespoon of butter and sprinkle with another 1/4 teaspoon salt and a pinch of freshly ground black pepper.
- Pour 1/2 cup (120ml) of water into the bottom of the baking dish.
- Roast on the middle rack of the oven for approximately 60-70 minutes, or until the squash is tender and golden brown, and the edges are caramelized.
