- Juice of 1 large lemon
- Salt

How to Make Adas Bil Hamod Lentils With Lemon Juice
- Rinse 1 cup of brown or green lentils under cold water.
- In a medium saucepan, combine the lentils with 3 cups of water and bring to a boil. Reduce heat to low, cover, and simmer for 15 minutes.
- Peel and cube 2 medium potatoes. Add them to the lentils and continue to simmer for another 15 minutes, or until the lentils and potatoes are tender, stirring occasionally.
- While the lentils simmer, heat 1 tablespoon of olive oil in a small skillet over medium heat. Add 2 cloves of minced garlic and 1/4 cup of chopped fresh coriander (cilantro). Sauté until fragrant and slightly softened, about 2-3 minutes.
- Stir the garlic-coriander mixture into the lentils and potatoes.
- In a small bowl, whisk together 1 tablespoon of all-purpose flour with 2 tablespoons of water until smooth. Add this mixture to the lentils and stir well.
- Reduce heat to medium-low and simmer for 15 minutes more, stirring occasionally to prevent sticking or burning.
- Remove from heat and stir in the juice of 1 large lemon.
- Serve hot or cold with pita bread. Enjoy!
Chef's Tip for Extra Flavor
Chef's secret: layers of flavor make a dish truly memorable! Consider what a little extra something could bring – perhaps a touch of acidity like a good vinegar or citrus zest, a hint of smokiness from paprika, a bit of umami from mushrooms or soy sauce, or a sprinkle of toasted nuts for texture. Experiment and taste as you go!
