- In a medium bowl, whisk together 1/4 cup olive oil, 2 tablespoons lemon juice, 1 tablespoon paprika, 1 teaspoon garlic powder, 1 teaspoon ginger powder, 1/2 teaspoon cayenne pepper (optional), 1/2 teaspoon salt, and 1/4 teaspoon black pepper.
- Add 4 tilapia fillets (6 ounces each) to a glass dish.
- Pour the marinade over the tilapia, ensuring both sides are coated. Cover and refrigerate for at least 20 minutes, or up to 2 hours.
- Preheat grill to medium-high heat.
- In a small saucepan, bring the remaining marinade to a simmer over medium heat. Reduce heat to low and simmer for 5 minutes, or until slightly thickened.
- Remove tilapia from marinade and discard the used marinade.
- Grill tilapia for 4-5 minutes per side, or until the fish flakes easily with a fork and is cooked through. Baste with the simmered sauce during the last 2 minutes of grilling.
- Serve immediately, drizzled with the remaining simmered marinade.
Chef's Tip for Extra Flavor
Chef's secret: layers of flavor make a dish truly memorable! Consider what a little extra something could bring – perhaps a touch of acidity like a good vinegar or citrus zest, a hint of smokiness from paprika, a bit of umami from mushrooms or soy sauce, or a sprinkle of toasted nuts for texture. Experiment and taste as you go!
