How to Make Alcapurrias

  1. Boil water in a large bowl.
  2. Wash and trim the ends of 1 pound of green plantains (guineitos). Cut a slit lengthwise in each plantain.
  3. Submerge the plantains in the boiling water for 5 minutes to soften.
  4. Peel the plantains and 1/2 pound of yautia. As you peel, immediately place them in a bowl of salted water to prevent browning.
  5. Using a fine grater, grate the plantains and yautia into a large bowl.
  6. Add 1 teaspoon of salt, 1 tablespoon of sazón seasoning, and 1/4 cup of shortening to the grated vegetables. Mix thoroughly.
  7. Refrigerate the mixture for at least 3 hours, or preferably overnight, to allow the flavors to meld.
  8. In a large skillet, brown 1 pound of ground beef over medium-high heat. Drain off any excess grease.
  9. Add 1/2 cup of sofrito, 1/4 cup of adobo seasoning, and 1/4 cup of finely chopped onions to the browned meat. Stir well and cook for 15 minutes over medium heat.
  10. Season the meat to taste with additional salt if needed.
  11. Heat 2 cups of vegetable oil in a large, deep pot to 375°F (190°C). Use a thermometer to monitor the temperature.
  12. Lightly grease a large sheet of aluminum foil with oil.
  13. Place approximately 1/4 cup of the alcapurria dough onto the center of the aluminum foil.
  14. Add 1 tablespoon of the meat filling to the center of the dough. Fold one side of the dough over the filling, using the aluminum foil to help shape and seal the alcapurria.
  15. Carefully slide the alcapurria into the hot oil using a spoon.
  16. Fry until golden brown, about 3-4 minutes per side. Remove and drain on paper towels.
