How to Make Baked Cod With Greek Potatoes
- Preheat oven to 375°F (190°C).
- In a large roasting pan or gratin dish, toss 1.5 lbs small red potatoes (quartered), 1 medium yellow onion (thinly sliced), 2 cloves garlic (minced), 2 tbsp fresh oregano, and 1 tbsp fresh thyme.
- Season generously with salt and freshly ground black pepper. Drizzle with 3 tbsp extra virgin olive oil.
- Pour 2 tbsp fresh lemon juice over the potatoes. Add enough water to barely cover the potatoes (about ½ cup).
- Cook uncovered for 45 minutes, then gently toss the potatoes. Bake for an additional 25 minutes.
