  2. In a large roasting pan or gratin dish, toss 1.5 lbs small red potatoes (quartered), 1 medium yellow onion (thinly sliced), 2 cloves garlic (minced), 2 tbsp fresh oregano, and 1 tbsp fresh thyme.
