How to Make Ally Style Pasta Carbonara

  1. Cook pasta according to package directions. Reserve about 1/2 cup of pasta water before draining.
  2. In a small bowl, whisk together 2 tablespoons of the milk and the cornflour until smooth to form a slurry.
  3. In a medium saucepan, heat the remaining milk over medium heat. Gradually whisk in the cornflour slurry.
  4. Continue to whisk constantly until the sauce thickens, about 2-3 minutes.
  5. Reduce heat to low and stir in the Parmesan cheese until melted and smooth. Season with salt and pepper.
  6. Add the diced ham and stir to combine.
  7. Add the cooked pasta to the sauce and toss to coat. Add a little of the reserved pasta water if needed to adjust consistency.
  8. Serve immediately and enjoy!
