- Sliced Almonds
How to Make Amaretto Pear Parfaits
- Peel, core, and thinly slice 2 medium Bosc pears (or 2 ripe peaches).
- In a medium bowl, combine the sliced pears (or peaches), 2 tablespoons of granulated sugar, 1 tablespoon of amaretto liqueur, and 1/4 teaspoon of ground cinnamon. Gently toss to coat.
- Cover the bowl and refrigerate for at least 1 hour to allow the flavors to meld.
- While the pear mixture chills, prepare the almond crumble: Combine 1/4 cup crushed almond biscotti, 2 tablespoons of melted unsalted butter, and 1 tablespoon of granulated sugar in a small bowl. Mix until crumbly.
- In each of four 8-oz glasses, layer the ingredients as follows: 1 tablespoon of almond crumble, 3 tablespoons of chilled pear mixture, and 3 tablespoons of low-fat vanilla yogurt (or frozen yogurt).
- Repeat the layers (crumble, pear mixture, yogurt) one more time.
- Top each parfait with 1 tablespoon of sliced almonds.
- Refrigerate for at least 30 minutes before serving to allow the flavors to fully develop and the parfait to set.
Chef's Tip for Extra Flavor
Chef's secret: layers of flavor make a dish truly memorable! Consider what a little extra something could bring – perhaps a touch of acidity like a good vinegar or citrus zest, a hint of smokiness from paprika, a bit of umami from mushrooms or soy sauce, or a sprinkle of toasted nuts for texture. Experiment and taste as you go!
