How to Make Arctic Char With Pears

  1. In a large bowl, toss 2 ripe but firm pears, peeled, cored, and thinly sliced, with 2 tablespoons of orange juice. Set aside.
  2. Heat 1 tablespoon olive oil in a pan over medium-low heat. Add 1/2 cup thinly sliced shallots and cook for 20-30 minutes, stirring occasionally, until softened and caramelized.
