Ingredients for Arctic Char With Pears

  • Bosc Pears
  • Fresh Orange Juice
  • Grapeseed Oil
  • 1/2 cup thinly sliced shallots
  • 1 tablespoon Grand Marnier
  • Fresh Chives
  • Fresh Ginger
  • Salt
  • Fresh Ground Black Pepper
  • Panko Breadcrumbs
  • 1/2 teaspoon curry powder
  • 4 (6-ounce) arctic char fillets
  • Unbleached All Purpose Flour
  • 2 tablespoons melted butter
  • 1/4 cup chopped walnuts (optional)

How to Make Arctic Char With Pears

  1. In a large bowl, toss 2 ripe but firm pears, peeled, cored, and thinly sliced, with 2 tablespoons of orange juice. Set aside.
  2. Heat 1 tablespoon olive oil in a pan over medium-low heat. Add 1/2 cup thinly sliced shallots and cook for 20-30 minutes, stirring occasionally, until softened and caramelized.
  3. Drain the pear slices and gently toss with 1 tablespoon Grand Marnier, 2 tablespoons chopped fresh chives, 1 teaspoon grated fresh ginger, salt, and pepper to taste.
  4. Arrange the pear mixture attractively on a serving platter. Top with the caramelized shallots.
  5. Preheat oven to 400°F (200°C).
  6. In a shallow dish, combine 1/2 cup panko bread crumbs with 1/2 teaspoon curry powder.
  7. Dip 4 (6-ounce) arctic char fillets in 1/4 cup all-purpose flour, shaking off any excess. Place fillets in a baking dish.
  8. Pat the panko mixture evenly onto the char fillets. Drizzle with 2 tablespoons melted butter.
  9. Pour 2 tablespoons of water around the fillets in the baking dish.
  10. Bake for 12-15 minutes, or until the char is cooked through and the bread crumbs are golden brown.
  11. Carefully arrange the baked char fillets over the pear mixture, ensuring the pear design is visible.
  12. Sprinkle with 1/4 cup chopped walnuts (optional).

Chef's Tip for Extra Flavor

Want to unlock deeper, more complex flavors? Try toasting your whole spices before grinding them, or blooming ground spices in a little warm oil to enhance their aroma. Deglazing your pan with a bit of stock, wine, or even water after browning ingredients can capture those tasty caramelized bits, adding richness to your dish.
