How to Make Angel Hair Pasta With Simple Garlic Basil

  1. Bring a large pot of salted water (about 6 quarts) to a rolling boil over high heat.
  2. While the water heats, heat 2 tablespoons of olive oil in a large sauté pan over medium heat.
  3. Add 4 cloves of minced garlic to the pan and cook until fragrant and lightly golden (about 1 minute), being careful not to burn.
  4. Remove the pan from the heat and pour in 1/4 cup of dry white wine, swirling to deglaze the pan.
  5. Return the pan to medium heat and simmer for 2-3 minutes, or until the wine has reduced by about half.
  6. Stir in 1 tablespoon of fresh lemon juice, 1/2 cup of chopped fresh tomatoes, and salt and freshly ground black pepper to taste.
  7. Remove from heat and set aside.
  8. Add 8 ounces of angel hair pasta to the boiling water. Cook according to package directions, usually 3-5 minutes, until al dente.
  9. Drain the pasta, reserving about 1/4 cup of pasta water.
  10. Add the cooked pasta to the garlic and tomato mixture. Stir in 1/4 cup of fresh basil leaves and a pinch of red pepper flakes (optional).
  11. Toss to combine, adding a little pasta water if needed to loosen the sauce.
  12. Serve immediately, topped with grated Parmesan cheese or your favorite cheese, and sliced olives if desired.
