How to Make Annie S Melt In Your Mouth Mahi Fish

  1. Preheat oven to 350°F (175°C).
  2. In a shallow dish, whisk together 2 tablespoons olive oil and 2 tablespoons lemon juice.
  3. In a separate shallow dish, combine 1 cup breadcrumbs, 1/4 cup grated Parmesan cheese, 1 tablespoon chopped fresh dill, 1 tablespoon chopped fresh rosemary, 1/2 teaspoon salt, and 1/4 teaspoon black pepper.
  4. Dip each fish fillet (or chicken breast) into the olive oil mixture, ensuring it's fully coated. Then, dredge in the breadcrumb mixture, pressing gently to adhere.
  5. Arrange the coated fillets in a 9x13 inch glass baking dish.
