How to Make Anytime Hamburger Soup

  1. Brown 1 lb ground beef in a large pot over medium-high heat. Drain off any excess grease.
  2. Add 1 (15 ounce) can of diced tomatoes, undrained, 1 (10.75 ounce) can condensed beef broth, 1 (10 ounce) can diced tomatoes and green chilies (Rotel), 1 medium onion, chopped, and 2 cloves garlic, minced, to the cooked hamburger.
  3. Fill each of the empty cans with water (approximately 3 cups total) and add to the pot.
  4. Stir in 2 packets of beef-flavored ramen seasoning (discard the noodles).
  5. Bring the soup to a boil, then reduce heat to low, cover, and simmer for 30-40 minutes, or until heated through and flavors have melded.
  6. Serve hot, topped with grated Parmesan cheese and crackers, if desired.
