How to Make Apple And Sultana Cake

  1. Preheat oven to 180°C (350°F). Grease and flour a 10 x 21cm loaf pan, or line the base and sides with baking paper.
  2. In a large bowl, sift together 200g self-raising flour and 1 teaspoon ground cinnamon.
  3. Add 175g caster sugar and mix well.
  4. In a separate bowl, whisk together 2 large eggs, 1 teaspoon vanilla essence, and 100g melted unsalted butter (cooled).
  5. Gradually add the wet ingredients to the dry ingredients, mixing gently until just combined. Do not overmix.
  6. Fold in 200g peeled and chopped apples and 100g sultanas.
  7. Spoon the batter into the prepared loaf pan and smooth the surface.
  8. Bake for approximately 55-65 minutes, or until a wooden skewer inserted into the centre comes out clean. If browning too quickly, cover loosely with foil.
  9. Let the cake cool in the pan for 10 minutes before turning it out onto a wire rack to cool completely.
