How to Make Apple And Sultana Cake
- Preheat oven to 180°C (350°F). Grease and flour a 10 x 21cm loaf pan, or line the base and sides with baking paper.
- In a large bowl, sift together 200g self-raising flour and 1 teaspoon ground cinnamon.
- Add 175g caster sugar and mix well.
- In a separate bowl, whisk together 2 large eggs, 1 teaspoon vanilla essence, and 100g melted unsalted butter (cooled).
- Gradually add the wet ingredients to the dry ingredients, mixing gently until just combined. Do not overmix.
- Fold in 200g peeled and chopped apples and 100g sultanas.
- Spoon the batter into the prepared loaf pan and smooth the surface.
- Bake for approximately 55-65 minutes, or until a wooden skewer inserted into the centre comes out clean. If browning too quickly, cover loosely with foil.
- Let the cake cool in the pan for 10 minutes before turning it out onto a wire rack to cool completely.
