How to Make Almond Muffins With Gooey Fig Center

  1. Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a separate bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the milk and oil until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. Stir in 1/2 cup of the sliced almonds.
  7. In a food processor, puree the chopped figs until smooth.
  8. Heat the fig puree in a small saucepan over low heat for 5-10 minutes, stirring constantly, until it gently boils and thickens slightly. Let cool completely, then refrigerate until chilled.
  9. Fill each muffin cup halfway with the batter.
  10. Add about 1 tablespoon of the chilled fig puree to the center of each muffin.
  11. Top with a spoonful of batter to cover the fig puree.
  12. Sprinkle the remaining sliced almonds over the tops of the muffins.
  13. Bake for 12-15 minutes, or until a toothpick inserted into the center comes out clean.
  14. Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.

Chef's Tip for Extra Flavor

Want to unlock deeper, more complex flavors? Try toasting your whole spices before grinding them, or blooming ground spices in a little warm oil to enhance their aroma. Deglazing your pan with a bit of stock, wine, or even water after browning ingredients can capture those tasty caramelized bits, adding richness to your dish.
