How to Make Apple Dijon Pork Roast

  1. Trim visible fat from a 3-4 pound pork roast.
  2. Cut the pork roast in half lengthwise to fit your slow cooker (5 qt or larger).
  3. Place both halves side-by-side in the bottom of the slow cooker.
  4. In a 4-cup glass measuring cup, whisk together 1 ½ cups apple juice, ½ cup Dijon mustard, and 1 cup chicken broth.
  5. Pour the apple juice mixture evenly over the pork roast.
  6. Cover the slow cooker and cook on low for 8-10 hours, or until a meat thermometer inserted into the thickest part of each roast registers 160°F (71°C).
  7. Once cooked, carefully remove the pork roast from the slow cooker and transfer to a platter.
  8. Using two forks, shred the pork roast.
  9. In a small jar with a lid, combine 2 tablespoons cornstarch and 2 tablespoons cold water. Shake well to combine.
  10. Slowly whisk the cornstarch slurry into the remaining sauce in the slow cooker, 1 tablespoon at a time, stirring constantly until the sauce slightly thickens (about 1 minute).
  11. Ladle the thickened sauce over the shredded pork and serve immediately. Enjoy!
