How to Make Apple Glazed Cornish Game Hens
- Preheat your broiler.
- Spray a broiler pan with nonstick cooking spray.
- Place Cornish hens (or chicken drumsticks) skin-side down on the prepared pan, 7 inches from the broiler element.
- Broil for 15 minutes.
- Flip the hens and broil for another 5-10 minutes (10-15 for drumsticks), or until the internal temperature reaches 165°F (74°C).
- While the hens are broiling, prepare the glaze: In a small saucepan, combine 1/2 cup apple cider, 1/2 cup apple jelly, 1 tablespoon five-spice powder, 1/2 teaspoon salt, and a pinch of cayenne pepper.
- Bring the glaze mixture to a simmer over medium heat.
- Reduce heat to low and simmer for 7 minutes, or until the glaze thickens to a syrupy consistency.
- Remove the hens from the broiler and carefully remove the skin from each hen (if using Cornish hens).
- Brush half of the warm glaze over the hens.
- Return the hens to the broiler for 1-2 minutes, or until the glaze is bubbly and slightly caramelized.
- Transfer the hens to a serving platter and drizzle with the remaining glaze. Serve immediately.
