How to Make Apple Jelly Compote
- In a small saucepan, combine 1/2 cup sugar, 1/2 cup apple jelly, 1 tablespoon lemon zest (from about 1 lemon), and 1 tablespoon of rum (optional).
- Cook over medium heat for 4 minutes, stirring occasionally, until the jelly melts and the sugar dissolves.
- While the syrup simmers, peel and thinly slice 3 medium apples (about 3 cups).
- Add the sliced apples to a large saucepan.
- Pour the prepared syrup over the apple slices. Add 1 teaspoon ground cinnamon and 1/4 cup raisins.
- Stir gently to combine. Cook partially covered over medium heat for 18 minutes, or until the apples are tender but still hold their shape, stirring occasionally.
- If desired, carefully transfer the mixture to a blender and puree until smooth. (Alternatively, enjoy with chunky apple pieces).
- Let cool completely before serving. Enjoy warm or chilled, plain or with a scoop of your favorite vanilla ice cream!
