How to Make Apple Jelly Compote

  1. In a small saucepan, combine 1/2 cup sugar, 1/2 cup apple jelly, 1 tablespoon lemon zest (from about 1 lemon), and 1 tablespoon of rum (optional).
  2. Cook over medium heat for 4 minutes, stirring occasionally, until the jelly melts and the sugar dissolves.
  3. While the syrup simmers, peel and thinly slice 3 medium apples (about 3 cups).
  4. Add the sliced apples to a large saucepan.
  5. Pour the prepared syrup over the apple slices. Add 1 teaspoon ground cinnamon and 1/4 cup raisins.
  6. Stir gently to combine. Cook partially covered over medium heat for 18 minutes, or until the apples are tender but still hold their shape, stirring occasionally.
  7. If desired, carefully transfer the mixture to a blender and puree until smooth. (Alternatively, enjoy with chunky apple pieces).
