Ingredients for Apple Pie No Cook

  • 1 (9-inch) raw vegan pie crust (store-bought or homemade)
  • Golden Delicious Apples
  • 1 cup pitted Medjool dates, packed
  • Sea Salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon vanilla powder
  • 1/2 cup raisins
  • Flax Seeds

How to Make Apple Pie No Cook

  1. Prepare your raw vegan pie crust (or use a store-bought one) and press it firmly into a 9-inch pie plate.
  2. In a food processor, combine 1/3 of the sliced apples, salt, cinnamon, 1/2 cup of the dates, and vanilla powder.
  3. Process until the mixture resembles a coarse applesauce. Scrape down the sides as needed.
  4. Add the remaining apples to the food processor in batches, pulsing until they are finely chopped but not completely pureed. You want some texture!
  5. Add the raisins and pulse to combine.
  6. Stir in the ground flax seeds. Add the remaining dates and pulse to combine, until desired consistency is reached.
  7. Let the apple mixture sit for 15 minutes to allow the flavors to meld.
  8. Gently pour the apple mixture into the prepared pie crust.
  9. Top with chopped walnuts, if desired.
  10. Refrigerate for at least 30 minutes before serving to allow the pie to set. Enjoy!

Chef's Tip for Extra Flavor

Small additions can make a big impact! Try a sprinkle of fresh herbs, a dash of your favorite spice blend, or a squeeze of citrus just before serving to really enhance the flavors of your dish.
