How to Make Apple Pie No Cook
- Prepare your raw vegan pie crust (or use a store-bought one) and press it firmly into a 9-inch pie plate.
- In a food processor, combine 1/3 of the sliced apples, salt, cinnamon, 1/2 cup of the dates, and vanilla powder.
- Process until the mixture resembles a coarse applesauce. Scrape down the sides as needed.
- Add the remaining apples to the food processor in batches, pulsing until they are finely chopped but not completely pureed. You want some texture!
- Add the raisins and pulse to combine.
- Stir in the ground flax seeds. Add the remaining dates and pulse to combine, until desired consistency is reached.
- Let the apple mixture sit for 15 minutes to allow the flavors to meld.
- Gently pour the apple mixture into the prepared pie crust.
- Top with chopped walnuts, if desired.
- Refrigerate for at least 30 minutes before serving to allow the pie to set. Enjoy!
