How to Make Apple Cider Pie
- Preheat oven to 375°F (190°C).
- In a small saucepan, combine 1 ½ cups apple cider, ½ cup chopped dates, 2 tablespoons cornstarch, 1 teaspoon ground ginger, and the zest of 1 lemon.
- Bring to a boil over medium heat, stirring constantly, until thickened (about 2 minutes).
- Remove from heat and set aside.
- Line a 9-inch pie plate with one pie crust. Trim the edges.
- In a large bowl, gently toss 6 cups peeled and sliced apples with ½ cup granulated sugar and 2 tablespoons all-purpose flour.
- Pour the apple mixture into the pie crust.

- Place the second pie crust on top. Cut several slits in the top crust to allow steam to escape.
