How to Make Apple Scone Cake
- Preheat oven to 350°F (175°C) and place rack in the center.
- Grease a 9-inch glass pie plate with cooking spray.
- In a small bowl, whisk together 1 large egg and 1 tablespoon of the 1/2 cup milk. Set aside for glazing.
- In a large bowl, whisk together 2 cups all-purpose flour, 1 cup granulated sugar, 2 teaspoons baking powder, and 1/2 teaspoon salt.
- Cut 1 cup (2 sticks) cold unsalted butter, cut into small pieces, into the flour mixture using a pastry blender or two knives until the mixture resembles coarse crumbs.
- In a separate small bowl, whisk together the remaining 1 large egg, remaining 1/4 cup milk, and 1 teaspoon vanilla extract.
- Add the wet ingredients to the flour mixture, stirring gently just until the dough comes together. Do not overmix.
- Turn the dough out onto a lightly floured surface and gently knead 4-5 times. Divide the dough in half.
- Pat one half of the dough into the bottom and up the sides of the prepared pie plate.
- In a separate bowl, toss together 4 medium apples (about 2 cups peeled and sliced), 1/4 cup granulated sugar, and 1 teaspoon ground cinnamon.
- Spread the apple mixture evenly over the bottom crust.
- On a lightly floured surface, roll the remaining dough into a 9-inch circle.
- Carefully place the top crust over the apples. Seal the edges by pinching them together.
- Brush the top crust with the reserved egg and milk glaze and sprinkle with 1 tablespoon granulated sugar.
- Cut a slit in the center of the top crust to allow steam to escape.
- Bake for 40-45 minutes, or until the pastry is golden brown and a toothpick inserted into the center comes out clean.
- Let cool on a wire rack before serving.
- Serve warm with a dollop of frozen vanilla yogurt or whipped cream.
Chef's Tip for Extra Flavor
Chef's secret: layers of flavor make a dish truly memorable! Consider what a little extra something could bring – perhaps a touch of acidity like a good vinegar or citrus zest, a hint of smokiness from paprika, a bit of umami from mushrooms or soy sauce, or a sprinkle of toasted nuts for texture. Experiment and taste as you go!
