How to Make Apricot Glazed Pork Tenderloin
- Preheat your broiler.
- Position the rack 4 inches from the broiler element.
- Line a rimmed baking sheet with foil.
- Rub the pork tenderloin (approximately 1.5 lbs) with 1 tablespoon of olive oil.
- Season generously with salt and freshly ground black pepper.
- Broil for 10 minutes.
- In a small saucepan, whisk together 1/2 cup apricot jam and 2 tablespoons Dijon mustard.
