In a 1-gallon zip-top bag, combine 1/2 cup strong brewed coffee, 1/4 cup molasses, 2 tablespoons apple cider vinegar, 1 tablespoon Dijon mustard, 2 cloves garlic (minced), 1 teaspoon salt, 1/2 teaspoon black pepper, 1 tablespoon grated fresh ginger, 2 sprigs fresh thyme, and 4 (1-inch thick) bone-in pork chops.
