- In a 1-gallon zip-top bag, combine 1/2 cup strong brewed coffee, 1/4 cup molasses, 2 tablespoons apple cider vinegar, 1 tablespoon Dijon mustard, 2 cloves garlic (minced), 1 teaspoon salt, 1/2 teaspoon black pepper, 1 tablespoon grated fresh ginger, 2 sprigs fresh thyme, and 4 (1-inch thick) bone-in pork chops.
- Seal the bag, pressing out excess air, and shake to thoroughly coat the pork chops.
- Marinate in the refrigerator for at least 2 hours, or preferably overnight.
- Preheat grill to medium-high heat.
- Remove pork chops from the bag, reserving the marinade.
- In a small saucepan, bring the reserved marinade to a gentle boil over medium-high heat.
- Reduce the marinade, stirring frequently, until it thickens to a glaze consistency (about 1/2 cup), approximately 12-15 minutes.
- Remove thyme sprigs from the glaze.
