- Wash 1 pound of fresh apricots and soak them in warm water for 6-8 hours, or overnight. Remove the pits using a sharp knife.
- Mash the apricots slightly. In a saucepan, combine the apricots with 1/2 cup of granulated sugar and 1/2 cup of water. Bring to a boil over medium heat, then reduce heat and simmer until the apricots are very soft (about 10-15 minutes).
- Remove from heat and stir in 2 tablespoons of fresh lemon juice. Let the sauce cool completely.
