  • 1/2 cup milk
  • 1 large egg
  • 1/4 cup dry white wine

How to Make Au Gratin Artichokes

  1. Preheat oven to 400°F (200°C).
  2. Melt 2 tablespoons of butter in a large skillet over medium heat. Add 1 finely chopped onion and 2 cloves minced garlic. Saute until softened, about 5 minutes.
  3. Add 1 (14 ounce) can of artichoke hearts, drained and thinly sliced, to the skillet. Cook for 5-7 minutes, until heated through.
  4. In a separate bowl, whisk together 1/2 cup milk, 1 large egg, 1/4 cup dry white wine, 1/4 teaspoon salt, and 1/4 teaspoon black pepper.
  5. Stir in 1/2 cup grated Gruyere cheese (or similar) into the milk mixture.
  6. Transfer the artichoke mixture to a greased 8x8 inch baking dish.
  7. Pour the milk mixture evenly over the artichokes.
  8. Sprinkle with the remaining 1/2 cup Gruyere cheese, 1/4 cup breadcrumbs, and a pinch of paprika.
  9. Bake for 20-25 minutes, or until golden brown and bubbly.

Chef's Tip for Extra Flavor

Want to unlock deeper, more complex flavors? Try toasting your whole spices before grinding them, or blooming ground spices in a little warm oil to enhance their aroma. Deglazing your pan with a bit of stock, wine, or even water after browning ingredients can capture those tasty caramelized bits, adding richness to your dish.
