How to Make Apricot Truffles
- Mince 1 cup dried apricots in a food processor until finely chopped.
- In a large bowl, combine the minced apricots with 1 1/2 cups shredded sweetened coconut, 1/2 cup melted dark chocolate, 2 tablespoons honey, and 1/4 teaspoon almond extract. Mix thoroughly until well combined.
- Refrigerate the mixture for at least 30 minutes to allow it to firm up.
- Once chilled, roll the mixture into 1-inch balls.
- Toss the truffles in 1/2 cup extra shredded coconut to coat.
- Refrigerate for at least another 30 minutes to allow the truffles to set completely before serving. For a cool summer treat, freeze for 30 minutes to 1 hour.
