Ingredients for Arizona Chicken

  • Boneless Skinless Chicken Breast Halves
  • Dijon Mustard
  • 2 tablespoons butter
  • 1 cup your favorite salsa (we recommend doubling it!)
  • Fresh Lime Juice
  • Fresh Cilantro

How to Make Arizona Chicken

  1. Pound each chicken breast to 1/2 inch thickness between two sheets of plastic wrap.
  2. Spread 1 tablespoon of Dijon mustard evenly over each chicken breast.
  3. Melt 2 tablespoons of butter in a large skillet over medium heat.
  4. Add chicken breasts and cook for 3-4 minutes per side, until lightly browned.
  5. In a small bowl, combine 1 cup of your favorite salsa and 1 tablespoon of lime juice.
  6. Pour the salsa mixture over the chicken in the skillet.
  7. Reduce heat to low, simmer uncovered for 6-8 minutes, or until the chicken is cooked through and the sauce has thickened slightly.
  8. Garnish with 2 tablespoons of fresh chopped cilantro before serving.

Chef's Tip for Extra Flavor

Want to unlock deeper, more complex flavors? Try toasting your whole spices before grinding them, or blooming ground spices in a little warm oil to enhance their aroma. Deglazing your pan with a bit of stock, wine, or even water after browning ingredients can capture those tasty caramelized bits, adding richness to your dish.
