How to Make Awesome Egg Rolls
- In a large bowl, combine the shredded cabbage, carrots, green onions, garlic, ginger, soy sauce, sesame oil, and rice vinegar. Mix well and set aside for 10 minutes to allow the flavors to meld.
- In a separate bowl, whisk together the egg, cornstarch, and salt. Pour over the vegetable mixture and stir to coat evenly.
- Lay out the egg roll wrappers on a clean surface. Place about 1/4 cup of the filling mixture in the center of each wrapper.
- Fold the bottom edge of the wrapper over the filling, then fold in the sides, and tightly roll up to the top edge, tucking the corner in to seal.
- Heat about 2 inches of vegetable oil in a large skillet or wok over medium-high heat.
- Carefully place a few egg rolls into the hot oil, ensuring not to overcrowd the pan. Fry for 3-4 minutes per side, until golden brown and crispy.
- Remove the egg rolls from the oil and place them on a paper towel-lined plate to drain excess oil.
- Serve hot with your favorite dipping sauce, such as sweet chili sauce or soy sauce.
