How to Make Artichoke Hearts Au Gratin
- Preheat oven to 450°F (232°C).
- Cut 14 ounces of artichoke hearts into 1/4-inch thick slices.
- Melt 4 tablespoons of butter in a large skillet over medium heat. Add 2 cloves of minced garlic and saute for 30 seconds until fragrant.
- Add the artichoke heart slices and saute for 5-7 minutes, until tender and slightly browned.
- Transfer the sauteed artichokes to a shallow 8x8 inch baking dish.
- In the same skillet, whisk together 2 tablespoons of all-purpose flour and 1/2 teaspoon of salt and 1/4 teaspoon of black pepper.
- Gradually whisk in 1 1/2 cups of milk, stirring constantly until the sauce thickens and is smooth.
- Remove from heat. In a separate bowl, whisk together 2 large eggs and 1/4 cup of grated Parmesan cheese until light and frothy.
- Gradually whisk the egg mixture into the warm cheese sauce until fully combined.
- Pour the cheese sauce over the artichoke hearts in the baking dish.
- Sprinkle with the remaining 1/4 cup of Parmesan cheese, 1/4 cup of bread crumbs, and a pinch of paprika.
- Bake for 15-20 minutes, or until golden brown and bubbly.
