  • 4 slices cooked bacon
  • 4 tablespoons (1/2 stick) butter
  • 8 medium russet potatoes
  • Cheddar Cheese
  • 1 teaspoon garlic powder

How to Make Ashleys Favorite Potato Skins

  1. Preheat oven to 450°F (232°C).
  2. Thoroughly wash 8 medium russet potatoes. Pierce each potato several times with a fork.
  3. Bake potatoes for 45-55 minutes, or until tender when pierced with a fork.
  4. Remove potatoes from oven and let cool slightly (5-10 minutes).
  5. Cut potatoes in half lengthwise.
  6. Using a spoon, scoop out about 2/3 of the potato flesh, leaving a ½-inch border. (Save the potato flesh for another use, like mashed potatoes!)
  7. In a microwave-safe bowl, combine 4 tablespoons (1/2 stick) of butter and 1 teaspoon of garlic powder. Microwave for 30 seconds, or until butter is melted and combined. Stir well.
  8. Brush the inside of each potato half with the garlic butter mixture.
  9. Sprinkle generously with 2 cups of shredded cheddar cheese (or your favorite cheese blend).
  10. Top with 4 slices of cooked bacon, crumbled.
