- 4 slices cooked bacon
- 4 tablespoons (1/2 stick) butter
- 8 medium russet potatoes
- Cheddar Cheese
- 1 teaspoon garlic powder
How to Make Ashleys Favorite Potato Skins
- Preheat oven to 450°F (232°C).
- Thoroughly wash 8 medium russet potatoes. Pierce each potato several times with a fork.
- Bake potatoes for 45-55 minutes, or until tender when pierced with a fork.
- Remove potatoes from oven and let cool slightly (5-10 minutes).
- Cut potatoes in half lengthwise.
- Using a spoon, scoop out about 2/3 of the potato flesh, leaving a ½-inch border. (Save the potato flesh for another use, like mashed potatoes!)
- In a microwave-safe bowl, combine 4 tablespoons (1/2 stick) of butter and 1 teaspoon of garlic powder. Microwave for 30 seconds, or until butter is melted and combined. Stir well.
- Brush the inside of each potato half with the garlic butter mixture.
- Sprinkle generously with 2 cups of shredded cheddar cheese (or your favorite cheese blend).
- Top with 4 slices of cooked bacon, crumbled.
- Reduce oven temperature to 400°F (204°C).
- Bake for 15-20 minutes, or until cheese is melted, bubbly, and lightly browned.
- Optional: Top with 1/2 cup sour cream and 2 tablespoons chopped green onions before serving.
