How to Make Bacon N Veggie Pasta

  1. Cook pasta according to package directions. Drain and set aside.
  2. In a large saucepan, combine vegetable broth, diced tomatoes, salt, pepper, broccoli, and carrots. Bring to a boil.
  3. Reduce heat, cover, and simmer for 25-30 minutes, or until broccoli and carrots are tender.
  4. While vegetables simmer, cook bacon in a large skillet over medium heat until crisp. Remove bacon with a slotted spoon and set aside on paper towels, reserving 1 tablespoon bacon grease.
  5. In the same skillet, add olive oil. Saute onion, green pepper, and garlic in the bacon grease until softened, about 5 minutes.
  6. Add the sauteed vegetables to the saucepan with the cooked broccoli and carrots. Stir to combine.
  7. Add the cooked pasta to the vegetable mixture and toss to coat.
  8. Top with crispy bacon and grated Parmesan cheese. Serve immediately.
