  • Stewed Tomatoes

  • 1 green bell pepper, chopped
  • 1 medium onion, chopped
  • Garlic Clove
  • Medium Pasta Shells
  • 1/2 cup grated parmesan cheese

How to Make Bacon N Veggie Pasta

  1. Cook pasta according to package directions. Drain and set aside.
  2. In a large saucepan, combine vegetable broth, diced tomatoes, salt, pepper, broccoli, and carrots. Bring to a boil.
  3. Reduce heat, cover, and simmer for 25-30 minutes, or until broccoli and carrots are tender.
  4. While vegetables simmer, cook bacon in a large skillet over medium heat until crisp. Remove bacon with a slotted spoon and set aside on paper towels, reserving 1 tablespoon bacon grease.
  5. In the same skillet, add olive oil. Saute onion, green pepper, and garlic in the bacon grease until softened, about 5 minutes.
