How to Make Asparagus And Shrimp Penne Pasta
- Cook 1 pound penne pasta according to package directions. Drain and set aside.
- While pasta cooks, prepare the asparagus: Snap off the tough ends of 1 pound asparagus and cut into 1-inch pieces.
- In a large nonstick skillet, heat 1 tablespoon olive oil over medium heat. Add asparagus and cook for 3 minutes, stirring frequently.
- Add 1 pound peeled and deveined shrimp and 1/2 cup chopped red bell pepper to the skillet.
- Pour in 1/2 cup creamy Italian dressing (store-bought or homemade).
- Cover the skillet and cook for 5 minutes, or until shrimp are pink and asparagus is crisp-tender, stirring occasionally.
