How to Make Asparagus Black Bean Sauce Stir Fry
- In a small bowl, whisk together 2 tablespoons of dry sherry or cooking wine and 1 tablespoon of cornstarch until completely smooth. Set aside.
- In another bowl, combine 1/2 cup black bean sauce, 2 minced cloves of garlic, and 1 tablespoon of grated fresh ginger.
- Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium heat.
- Add the black bean sauce mixture to the hot oil. Cook, stirring constantly, for about 1 minute until fragrant.
- Stir in 1/4 cup of chicken or vegetable broth and 1 tablespoon of soy sauce. Cook for another minute, stirring constantly.
- Increase the heat to medium-high.
- Add 1 pound of trimmed asparagus and 2 thinly sliced green onions. Stir-fry for about 4 minutes, or until the asparagus is crisp-tender.
- If the sauce becomes too thick, add a tablespoon or two of additional broth to prevent sticking.
- Remove the asparagus and green onions from the pan and set aside.
- Reduce the heat to medium.
- Add the wine and cornstarch mixture to the pan. Stir constantly until the sauce thickens, about 1 to 2 minutes.
- Pour the thickened sauce over the asparagus and green onions. Sprinkle with 1/4 cup of roasted cashews (optional) and serve immediately.
