How to Make Barbecued Garlic Shrimp

  1. Melt butter in a heavy large skillet over medium-low heat.
  2. Add minced garlic and chopped green onions; sauté for 3 minutes until softened.
  3. Add white wine and simmer for 15 minutes, stirring occasionally, until slightly reduced.
  4. Stir in fresh lemon juice and season with black pepper to taste.
  5. Transfer the garlic mixture to a large bowl and let it cool completely.
  6. Add the shrimp and parsley to the cooled garlic mixture. Toss to coat evenly.
  7. Cover and refrigerate for at least 6 hours, or preferably overnight, turning occasionally.
  8. Prepare your grill for medium-high heat.
  9. Remove shrimp from marinade. Thread 2 shrimp onto each skewer.
  10. In a heavy medium saucepan, pour the remaining marinade.
  11. Simmer over medium heat until thickened, stirring occasionally, about 12 minutes.
  12. Strain the marinade through a fine-mesh sieve, pressing on the solids to extract as much liquid as possible. Discard solids.
  13. Season the strained marinade with pepper sauce and salt to taste.
  14. Spoon the thickened marinade into 8 small ramekins.
  15. Sprinkle each ramekin with minced red onion and 3 tablespoons of chopped parsley.
  16. Grill shrimp skewers for 2-3 minutes per side, or until pink and cooked through. Watch closely, as cooking time will depend on your grill's heat.
  17. Serve the grilled shrimp skewers immediately, placing one ramekin of sauce on each plate. Garnish with lemon wedges.
